We continuously recruit leading chefs from Hong Kong to maintain our excellent standard and to provide variety. The training they provide to local staff is invaluable and an integral part of our Kitchen Team.
Cantonese style cuisine is our speciality and new and exciting dishes are created continuously for our many regular customers to savour.
Some of the new and exciting dishes are:
- King Prawns in exotic five spice flavour
- Jumbo oysters steamed in the chef's magnificent X.O. sauce
- Fillet steak with slivered almond in orange sauce (rich and intense flavour)
- Diced fillet steak stir fried with garlic and shallot (delicate flavour)
- Pork ribs with garlic and special vinaigrette in foil (wonderful aroma)
- Steamed Chinese vegetables stuffed with prawn meat (artistic presentation)
Some of the more adventurous dishes are:
- Crocodile meat steamed with Chinese mushroom and ham on a bed of lotus leaves
- Emu meat in garlic and black pepper sauce
And we cannot forget:
- Peking Duck, specially roasted by the chef and skillfully carved next to your table
- Famous live Queensland Mud Crab cooked in ginger and shallot or a sauce of your choice
- Live fish from the tank, steamed to perfection. Forget your fishing rod.
